This is our signature cake, a modernized black forest cake that we bet you won’t find anywhere else. The bottom and center of the cake are layered with a chocolate sponge with black cherries and filled with a layer of 66% cocoa Belgian chocolate mousse. The top is layered with vanilla mousse blended with an abundance of finely chopped maraschino red cherries, enhancing that biting texture. We use vanilla mousse and chocolate mousse to replace the traditional heavy whipped cream to make this cake lighter, richer in taste and texture. It is an invention that we are proud of.
